Acceptance and Iodine Content of Cookies With Addition of Brown Seaweed Flour (Eucheuma Cottonii)

چکیده

Gangguan akibat kekurangan Yodium (GAKI) merupakan rangkaian gejala yodium yang dapat menimbulkan efek penghambat fisik dan psikis serta mempengaruhi kualitas sumber daya manusia. Pemanfaatan rumput laut coklat pada produk cookies memiliki kandungan tinggi diharapkan mengurangi kejadian GAKY. Penelitian ini bertujuan untuk mengetahui terima dengan penambahan tepung coklat. Jenis penelitian adalah Pra Eksperimen desain Post Test Group Design, tiga perlakuan (15%, 20% 25%) satu kontrol (0%). Daya dinilai berdasarkan uji hedonik terhadap 30 panelis menggunakan metode Iodometri sebanyak 2 kali formula paling disukai. Hasil menunjukkan bahwa skor dari aspek warna disukai yaitu O2C (93,3%) rasa O2A (90%) aroma (96,6%) tekstur disuaki O2B (76,7%) hasil analisis mengandung 4,41 µg/g. Kandungan lebih banyak dibandingkan original hanya 0,085 µg/g setiap gram keping cookies. Sebaiknya dalam proses pengolahan jeruk nipis bau kurang enak
